Lentils are one of the oldest known food crops. With production beginning the in Middle East 8,500 years ago and migrating swiftly to the Mediterranean, Europe, and Asia. Lentils are a pulse, being produced on plants that grow fro 12 to 24 inches in height. The word Lens comes from the similarity between lentils and lenses.[1]
