Cauliflower is a vegetable belonging to the cabbage family. Besides the roots, it consists of a stalk and leaves supporting a large white head (known as the curd). Of these, only the curd is commonly eaten.
The cauliflower curd is highly nutritious, and a single serving gives nearly the recommended daily value of Vitamin C for a standard diet[1].
