Lettuce is a leafy green vegetable, often used raw in sandwiches and salads to add a fresh, subtle taste and crunchiness. It grows easily in a temperate climate and has the advantage that if one cuts the leaves but allow the roots and an inch or so of leaves to remain, it will grow again (the so-called 'cut and come again' techniques). In this way two or even three lettuces can be cropped from a single plant.
